The sticky date pudding is very popular in Australia. It is one of my recent favourite cakes. It is moist, sticky and soft in the mouth... Here is my modified recipe of the cake. Tried, tested and everyone loved it! ½ cup butter (make sure it is soft in texture) 1 ¼ cup pitted honey coated dates (make sure the dates are coated in honey or else cake will not be sweet enough) 2 tsp baking powder 1 ¼ cup normal flour (sifted) 2 eggs 2 tsp vanilla essence ½ tsp salt -Pre heat oven to 250 degrees Celsius. . Butter a nine inch baking tray. Sprinkle a bit of flour so the cake doesn’t stick to the tray. -Place the dates in a sauce pan and cover with water (1 ½ cup). Bring to a boil and simmer( meaning reduce heat) and leave for 3 minutes. Remove and add baking powder. Set aside.
-Cream butter, salt and vanilla. Add eggs one at a time. Mix with an electric mixer till smooth. (if u don’t have an electric mixer, use a whisk and mix till smooth). Gently mix in the flour with a big spoon. ( do not mix for a long time after adding the flour). Stir in the cooked dates.
Bake in the oven for 30 – 40 minutes or until cooked in the centre. Caramel sauce as a topping
½ cup butter ¼ cup unsweetened whipping cream ½ cup brown sugar ½ tsp vanilla essence Combine butter, cream and brown sugar and vanilla in a pan and bring to a boil. Reduce heat and cook for 3 minutes.
SERVING SUGGESTIONS - drizzle sauce over the cake. Personally i don’t like the Caramel sauce but like to serve the cake with vanilla ice cream.
